Raw Stuffed Portobello Mushrooms with Rosemary Cashew Cheese

Posted by on Dec 26, 2014 in Blog, Main Course, Raw Food Recipes | 0 comments

By Stanka Vukelić Photo: Stanka Vukelić Raw Stuffed Portobello Mushrooms with Rosemary Cashew Cheese Portobello mushrooms are always great for various raw food recipes. They are an excellent meat replacement in sandwiches, lasagna, soups and more, and if you think these look good – no, they taste even better than they look. Definitely one of our favorites. Mushrooms are one of the few natural sources of Vitamin D, but the amount they contain depends on their exposure to ultraviolet light. They have more potassium than a banana and 1 mushroom (100 gram) covers 25% of the RDA in selenium. Portobellos are fat-free and very low in calories. You may serve as is, or you can add some marinated onions, chopped tomato cubes, or parsley for decoration.   Raw vegan recipe: Stuffed Portobello Mushrooms with Rosemary Cashew Cheese Preparation time:...

Raw Juice Pulp Crackers

Posted by on Nov 3, 2014 in Blog, Dehydrated, Raw Food Recipes | 4 comments

By Stanka Vukelić  Photo: Stanka Vukelić Raw Juice Pulp Crackers We always enjoy lots of fresh juices here, mostly made from organic fruits and vegetables, and as a result there’s a whole lot of pulp, which, instead of throwing it away, can be used as an ingredient for excellent crackers. The pulp is still a great source for fiber and other nutrients, so why not use it for raw crackers?! I usually collect juice pulp over the course of a couple of days, and store it in the fridge. These crackers are so simple. And, the added flavour options are endless. In this recipe, I use pulp from Apple Carrot Juice. The crackers can be used in various ways. We use it for sandwiches, vegetable spreads (as red pepper spread), or for various nut spreads.   Raw Juice Pulp...

By Stanka Vukelić  Photo: Stanka Vukelić Carrot Noodles with Red Pepper Sauce This raw red pepper sauce is delicious, healthy and super easy to make – just throw all the ingredients into a blender and it is good to go! It can be used as a sauce, a dip for veggies, chips/crackers, or as a salad dressing. Shepherd peppers are not just sweet but also packed with vitamins and nutrients which seem to have nice side effects: increasing one’s libido and building collagen 😉 – so they say. Just half a cup of sliced red pepper meets a quarter of the recommended adult daily dose of Vitamin A and almost the total recommended adult daily dose of Vitamin C, all for just 12 calories – and no fat or cholesterol. Red bell peppers are also high in carotenoids, which...

Garam Masala Sauce with Zucchini Noodles

Posted by on Jul 28, 2014 in Blog, Main Course, Raw Food Recipes | 0 comments

By Stanka Vukelić  Photo: Stanka Vukelić Raw food recipe: Garam Masala Sauce with Zucchini Noodles Garam masala is the heart of most Indian dishes. It’s a blend of ground spices: black and white peppercorns, cloves, cinnamon, black and white cumin seeds, and black, brown, and green cardamom pods. To get the best out of the spice, I like to use it in dishes which include tomatoes. This recipe is for those who are always too busy doing other things – it will take you no more than 10-15 minutes to make it! The spaghetti is made out of zucchini, but you can use also squash or carrot. There are quite a few ways you can turn zucchini into noodles. Some people use julienne peelers. You can also use an ordinary potato peeler. The most popular tool with which to...

Posted by on Jul 6, 2014 in Blog, Raw Food Recipes | 0 comments

The Winners Of Jonny Freesh’s Recipe Book Are … Who are the winners of the 2-Book-Giveaway of Jonny Freesh’s recipe book? We did it old-school. We wrote every name on a piece of paper and drew two names out of a plastic bowl. The names were drawn by a child who we – randomly – asked to do this for us. We hope this was fair enough! So the lucky winners are: Maureen and Veronica! Congratulations and thanks to everyone else for your participation! And, of course, thanks to Jonny for making two copies available. I must say this was fun – maybe we do some more in the future … Thanks!    ...

Jonny Freesh & organictalks.com   Raw Food Chef and Rapper Jonny Freesh: A 2-Book-Giveaway For Our Readers + His Chocolate and Vanilla Swirl Cake Recipe From The Book! Guys, it’s party time! There’s no other way but to start a blog post about Jonny Freesh. First, I must tell you that I’ve seen lots of crazy stuff in the vegan raw food world – but this has brought some real coolness to this movement. It’s hard to impress anyone with ‘healthy food’ and ‘right choices’ – it just ain’t groovy enough! So what better way is there, then to combine raw food and Hip-Hop? Yeah, Jonny Freesh does that; he’s a rapper and a raw food chef, and I can’t really say what he does better – rappin’ or ‘cookin’. In any case, he does an excellent job, and this is why...

Raw Sweet Potato Chips

Posted by on Jun 23, 2014 in Blog, Dehydrated, Raw Food Recipes | 0 comments

By Stanka Vukelić  Photo: Stanka Vukelić Raw Sweet Potato Chips For this recipe, I accidentally bought red sweet potatoes which I used because nothing else was available. Usually I use white sweet potatoes, which perhaps aren’t as sweet as other sweet potatoes, but much tastier because of their fluffier consistency and more delicate flavor. Red and white sweet potatoes are hard to distinguish; you’ll probably have to check with the seller which one it is. The best dips for sweet potato chips are Ajvar or Raw Ketchup. Enjoy.     Raw recipe: Sweet Potato Chips Preparation time: 10 min. Let it sit for: 60 min. or overnight Dehydration: 8-12 hours   Ingredients for 2 people : 3 big white sweet potatoes 5 tablespoons of extra virgin olive oil 5 tablespoons of tamari soy sauce 1-3 teaspoons of red pepper...

Fermented mushrooms

By Stanka Vukelić  Photo: Stanka Vukelić Fermented mushrooms This recipe has already been published as part of the Zucchini Spaghetti with Creamy Mushroom Sauce recipe. Because of the excellent taste and food value you get from the process of fermentation, I’ve decided to re-publish it again – independently. Fermented mushrooms can be used in salads, raw sauces, or as a great addition to raw sandwiches. In this recipe, we use champignons, but you can of course use other mushrooms of your choice as well. On mushrooms: Did you know, that mushrooms, much like our skin, transform ultraviolet light from the sun into Vitamin D and continue to do so even after they have been harvested? Vitamin D deficiency is common in the northern regions, especially during winter. Mushrooms exposed to the sun can provide as much vitamin D as...

By Stanka Vukelić Photo: Stanka Vukelić Raw Zucchini “Rice” with Sweet & Sour Sauce Even before going raw vegan, I was a huge fan of risottos. While experimenting, I found that vegetable rice can easily be created in a food processor. This is one variation with a fantastic sweet and sour sauce, which I make regularly. By Stanka Vukelić Photo: Stanka Vukelić Carrot Noodles with Green Pea Sauce Our local organic farmers have grown lots of carrots and peas, and as you already know; these two are a perfect combination for a deliciously sweet meal. The carrots will serve as noodles and the peas will be for the sauce on top. Peas are a good source of protein, niacin, folate, iron and phosphorus, and a very good source of manganese and vitamins A, C, K and thiamin, but more important: don’t be surprised to find out that this sauce is as good as or better than the cooked version. It’s fresh and light, yet very satisfying. So don’t hesitate – try it! The noodles are made of carrots, but you can also use squash or zucchini. There are quite a few ways you can turn...

By Stanka Vukelić Photo: Stanka Vukelić Raw Green Pea Dip or Spread To me, the best thing about raw food is its simplicity. This green pea dip is another example of how quick and easy tasty meals can be created in no time. It is only a myth that you need ‘lots of time’ for preparing raw foods. I hope I was able to convince you in my previous recipes that – that – is not the case. I’m 100% sure, you will enjoy this sweet and tasty green pea dish like I do. Peas are a good source of protein, niacin, folate, iron and phosphorus, and a very good source of manganese and vitamins A, C, K and thiamin, but more important: don’t be surprised to find out that this dip is as good as or better than...

Home Made Coconut Milk

By Stanka Vukelić Photo: Stanka Vukelić Home Made Coconut Milk The milk is made from coconut flour and water. Due to its rich and creamy consistency, it can be used as a really good milk substitute. It is a popular choice with vegans and makes a great base for smoothies, milkshakes, soups, or as a dairy alternative in cooking. It can also be used as a milk alternative for coffee. Classed as a fruit and frequently confused for being a nut, the coconut is actually a one–seeded drupe. Coconuts are highly nutritious and rich in fibre, vitamins C, E, B1, B3, B5 and B6 and minerals, including iron, selenium, sodium, calcium, magnesium and phosphorous. Due to its rich array of vitamins and minerals, benefits of coconut milk for health are many – see below.   Raw recipe: Coconut Milk...

By Stanka Vukelić Photo: Stanka Vukelić Raw Tomato Sauce (Ketchup) Recipe Here is a great recipe for an amazing homemade tomato sauce. This sweet sauce is prepared in 10 minutes, and can be used in numerous ways. This sauce (or ketchup) is also a wonderful substitute for ketchups from the store – your children will love it! It can be served as a dip for raw chunky chips made from kale or sweet potato, or from zucchini. It is a great ingredient for homemade sandwiches or raw burgers. We also use it as a sauce for raw spaghettis (made out of zucchini), or as a sauce for a raw pizza. And if you are still mostly cooking, then is this raw tomato sauce a healthier alternative to cooked sauces. Watch to let the cooked dishes cool down to 115ºF...
