The pulp is still a great source for fiber and other nutrients, so why not use it for raw crackers?! I usually collect juice pulp over the course of a couple of days, and store it in the fridge. These crackers are so simple. And, the added flavour options are endless. In this recipe, I use pulp from Apple Carrot Juice. The crackers can be used in various ways. Usually I use white sweet potatoes, which perhaps aren’t as sweet as other sweet potatoes, but much tastier because of their fluffier consistency and more delicate flavor. Red and white sweet potatoes are hard to distinguish; you’ll probably have to check with the seller which one it is. The best dips for sweet potato chips are Ajvar or Raw Ketchup. Fill them with seasonal vegetables, seaweed/algae, dips and even fermented vegetables (like sauerkraut).
