By Stanka Vukelić Photo: Stanka Vukelić Raw Stuffed Portobello Mushrooms with Rosemary Cashew Cheese Portobello mushrooms are always great for various raw food recipes. They are an excellent meat replacement in sandwiches, lasagna, soups and more, and if you think these look good – no, they taste even better than they look. Definitely one of our favorites. Mushrooms are one of the few natural sources of Vitamin D, but the amount they contain depends on their exposure to ultraviolet light. They have more potassium than a banana and 1 mushroom (100 gram) covers 25% of the RDA in selenium. Portobellos are fat-free and very low in calories. You may serve as is, or you can add some marinated onions, chopped tomato cubes, or parsley for decoration.   Raw vegan recipe: Stuffed Portobello Mushrooms with Rosemary Cashew Cheese Preparation time:...

By Stanka Vukelić  Photo: Stanka Vukelić Carrot Noodles with Red Pepper Sauce This raw red pepper sauce is delicious, healthy and super easy to make – just throw all the ingredients into a blender and it is good to go! It can be used as a sauce, a dip for veggies, chips/crackers, or as a salad dressing. Shepherd peppers are not just sweet but also packed with vitamins and nutrients which seem to have nice side effects: increasing one’s libido and building collagen 😉 – so they say. Just half a cup of sliced red pepper meets a quarter of the recommended adult daily dose of Vitamin A and almost the total recommended adult daily dose of Vitamin C, all for just 12 calories – and no fat or cholesterol. Red bell peppers are also high in carotenoids, which...

Posted by on Jul 28, 2014 in Blog, Main Course, Raw Food Recipes | 0 comments

By Stanka Vukelić  Photo: Stanka Vukelić Raw food recipe: Garam Masala Sauce with Zucchini Noodles Garam masala is the heart of most Indian dishes. It’s a blend of ground spices: black and white peppercorns, cloves, cinnamon, black and white cumin seeds, and black, brown, and green cardamom pods. To get the best out of the spice, I like to use it in dishes which include tomatoes. This recipe is for those who are always too busy doing other things – it will take you no more than 10-15 minutes to make it! The spaghetti is made out of zucchini, but you can use also squash or carrot. There are quite a few ways you can turn zucchini into noodles. Some people use julienne peelers. You can also use an ordinary potato peeler. The most popular tool with which to...

By Stanka Vukelić Photos: Stanka Vukelić Raw food recipe: Zucchini Spaghetti with Creamy Mushroom Sauce Last week, the Zucchini Spaghetti with Mediterranean Sauce were a huge hit; so you leave me no choice but to share with you another great sauce for your spaghettis. This one is just as easy to make, but before getting started you’ll need to do some preparation. The first thing is, the sauce is made from cashew nuts, which need to be soaked overnight. The second thing is, we want to use fermented mushrooms. For me, this is easier, because I usually have a glass of them in my fridge, but if you want to skip the seven-day fermentation process; you can use fresh mushrooms as well. Maybe you ferment the mushrooms for another time – because they are really awesome this way. On...
