Raw Green Pea Dip or Spread

By Stanka Vukelić Photo: Stanka Vukelić Raw Green Pea Dip or Spread To me, the best thing about raw food is its simplicity. This green pea dip is another example of how quick and easy tasty meals can be created in no time. It is only a myth that you need ‘lots of time’ for preparing raw foods. I hope I was able to convince you in my previous recipes that – that – is not the case. I’m 100% sure, you will enjoy this sweet and tasty green pea dish like I do. Peas are a good source of protein, niacin, folate, iron and phosphorus, and a very good source of manganese and vitamins A, C, K and thiamin, but more important: don’t be surprised to find out that this dip is as good as or better than...

By Stanka Vukelić Photo: Stanka Vukelić Raw Tomato Sauce (Ketchup) Recipe Here is a great recipe for an amazing homemade tomato sauce. This sweet sauce is prepared in 10 minutes, and can be used in numerous ways. This sauce (or ketchup) is also a wonderful substitute for ketchups from the store – your children will love it! It can be served as a dip for raw chunky chips made from kale or sweet potato, or from zucchini. It is a great ingredient for homemade sandwiches or raw burgers. We also use it as a sauce for raw spaghettis (made out of zucchini), or as a sauce for a raw pizza. And if you are still mostly cooking, then is this raw tomato sauce a healthier alternative to cooked sauces. Watch to let the cooked dishes cool down to 115ºF...

By Stanka Vukelić Photos: Stanka Vukelić Raw Wild Asparagus dip/spread/sauce In springtime, in the Mediterranean area, picking wild asparagus is deeply embedded in the habits of people. Asparagus ‘hunting’ is a favorite pastime, because, in addition to providing several hours of outdoor activity in the pure forest air; the day ends with a delicious and nutritious meal. Picking asparagus in the wild is a great exercise after a long winter! And on top of that – it’s loaded with nutrients and antioxidants (more info below). We also love to go for a ‘spring hunt’ in the forest, and after that, we usually prepare this delicious wild asparagus dip/spread/sauce. It is made of avocado, asparagus and lots of dill. The sauce can be used for veggie rolls/pockets, or as a spread/sauce for bread and pizza. It is a perfect dip...

Raw turmeric sauce / spread / dip

Posted by on Jan 19, 2014 in Blog, Raw Food Recipes, Spreads & Dips | 2 comments

By Stanka Vukelić Photo: Stanka Vukelić   Raw turmeric sauce / spread / dip This raw turmeric sauce is made of zucchinis, ground sunflower seeds, and of course a lot of turmeric – the king of spices (more about turmeric). The sauce can be used for veggie rolls/pockets, as a spread/sauce for bread and pizza, or for Sunflower Seeds Crackers. It is a perfect dip for celery stalks, carrots, or other vegetables. Also great for zucchini noodles! Yummy! If you are mostly cooking, then is a raw turmeric sauce a healthier alternative to cooked sauces; use it for lentils, and beans (a much healthier choice over processed food). Watch to let the cooked dishes cool down to 115ºF (46ºC) – so that you can hold it in your hand – before adding the raw turmeric sauce. Through that, the raw...

Raw recipe for dairy-free cheese – Brazil nut cheese

Posted by on Jan 4, 2014 in Blog, Cheese, Raw Food Recipes, Spreads & Dips | 3 comments

By Stanka Vukelić Photo: Stanka Vukelić   Raw recipe for dairy-free cheese – Brazil nut cheese This is a recipe for a dairy-free nut cheese made with your own probiotics! I love raw nut or seed cheeses. They offer a great, healthy alternative to dairy cheeses. The base is made from soaked cashews and Brazil nut, which gives it that perfect texture. You can use other nuts instead, just be aware that there will be a difference in flavor. To create the “cheesy” taste, I use lemon juice, nutritional yeast and rejuvelac. The rejuvelac aids in the fermenting process and increases the health benefits greatly. For making the cheese, you will first need to make the rejuvelac, which will act as the probiotic during the process of fermentation. Please note that you need to add a couple of days...

Raw basil-nut dip or spread

Posted by on Sep 16, 2013 in Blog, Raw Food Recipes, Spreads & Dips | 1 comment

By Stanka Vukelić   Raw basil-nut dip or spread Basil is a highly fragrant plant whose leaves are used as a seasoning herb for many different types of foods. It is an excellent addition to salads, raw soups, spreads, sauces, and dips. We are going to use it to make a spread with almond and cashew nuts. As icing on the cake – to the mediteranian taste – we’ll add olives. The spread is of “royal taste”, like basil itself. Its name is of Greek origin basileu, meaning king. The spread/dip is used for veggie rolls/pockets or as a spread/sauce for bread and pizza. It is a perfect dip for celery stalk, carrots, or other vegetables. Also great for zucchini noodles!   Preparation time: 10 min. Soaking: over night, or 8-12 hours   Ingredients for 2 people: 2/3 cup...

Raw Ajvar or raw red pepper spread

Posted by on Aug 26, 2013 in Blog, Raw Food Recipes, Spreads & Dips, Uncategorized | 0 comments

By Stanka Vukelić Raw red pepper spread In the Balkans, there is no kitchen that doesn’t use Ajvar; a dip made of eggplant and red pepper. It is an indispensable part of every barbeque and a regular ingredient for a home-made sandwich. Because of its great taste, they sometimes call it vegetable caviar. At this time of the year, when it’s eggplant and red pepper season, preparation is going on in domestic kitchens – cooking and roasting. In general, it requires a lot of time and work. We are presenting a raw ‘live’ version, which is very easy, requiring little time and skill. Besides all, it has a delicious taste, lots of vitamins and enzymes. It is used as a spread or dip – and extra yummy – when spread on a raw bread with raw cheese made from nuts. Or just as a...
