The cucumber growing season is coming to an end (homegrown); so we need to hurry up to get a last taste of this excellent and delicious soup/sauce.

The cucumber soup/sauce/dip is prepared in 5-10 minutes and can be used in many different ways. Served separately as a soup, or as a sauce for raw spaghettis made out of zucchini, or as a sauce for a raw pizza.
Try to use these kinds of raw sauces and combine them with cooked potatoes, lentils or beans. In this way, many important nutrients will be preserved, and you will have the full health benefits of them. However, don’t forget to cool down the cooked food to 115ºF (46ºC) – or less – before adding the raw cucumber sauce.

Preparing the cucumber soup / sauce / dip

Ingredients for 2 people:
3 – 4 medium-sized cucumbers
1 avocado
1 fresh-squeezed lemon
3 medium garlic cloves (or as you like)
2 tea spoons of dill spice
1/2 tea spoon of parsley
pinch of curry or cayenne pepper
pinch of Himalayan salt or other salt
pinch of black pepper
Methods/steps –
1. Slice and dice the cucumbers into small pieces.
2. Put all other ingredients into a blender.
3. Process until well combined and creamy.

I have been in a boring routine of eating the same green soup all the time. This is what I was looking for. Something new and simple. Will give this a try sometime this week!
